Staying Soft in Fall: Pumpkin Chia Seed Pudding

Ingredients

  • 1and 1/2 cup of milk of choice
  • 1/2 cup of pumpkin puree or canned pumpkin
  • 6 tablespoons of black chia seeds (2 per mason jar)
  • 1 teaspoon vanilla or option for Trader Joe's Bourbon Vanilla Bean Paste
  • 1 tablespoon of honey or almond butter or Trader Joe's Organic Maple Butter
  • 1 teaspoon of ground pumpkin spice or pumpkin pie spice
  • Toppings: pecans or pralines or Trader Joe's Pecan Pralines

Instructions

1. Blend together measured amount of milk, pumpkin puree, vanilla, honey, and ground seasonings

2. Add the blended mixture to your mason jars with the measured amount of chia seeds

3. Soak the chia seeds in the mixture overnight or for at least 4 hours

4. Top mixture once the chia seeds have finished soaking with granola, nuts, cinnamon bark, additional fruit, etc.

5. Enjoy!
